One of my favorite ways to use fresh summer zucchini! 🥒✨ These crispy fritters are packed with garlic, herbs, creamy goat cheese, and pan-fried until perfectly golden. Pair them with a garlic lemon sauce and you’ve got the perfect summer appetizer, side dish, or light lunch.

☀️ Ingredients:

• 2 large zucchini

• ½ tsp salt

• 3 garlic cloves, minced

• ¼ cup goat cheese

• ⅓ cup scallions, chopped

• ⅓ cup parsley, chopped

• ¼ cup all-purpose flour

• 1 large egg

• ¼ tsp black pepper

• Salt, to taste

• Olive oil, for frying

Directions:

1. Grate the zucchini (no need to peel).

2. Toss with ½ tsp salt and let sit for 10 minutes.

3. Squeeze out as much moisture as possible using your hands or a clean kitchen towel.

4. Mix the zucchini with the garlic, goat cheese, scallions, parsley, flour, egg, pepper, and salt to taste.

5. Heat olive oil in a skillet over medium-high heat. Scoop about 1½ tablespoons of batter for each fritter.
