🍗 Chicken:
* 1½ lbs boneless, skinless chicken thighs, cubed
* 1 tsp salt
* 1 tsp white sugar
* ½ tsp red chili powder or cayenne
* ½ tsp black pepper
* ½ packet sazon (optional)
* 1 cup cornstarch
* 1 egg
* Oil, for frying
* Chopped scallions, for garnish
* Sesame seeds, for garnish (optional)
🌶️ Sauce:
* ½ cup white sugar
* ¼ cup soy sauce
* ¼ cup chicken broth
* 1 tbsp rice vinegar
* 2 tsp sesame oil
* 2 garlic cloves, minced
* 1 knob fresh ginger, grated
* Chopped scallions
* 6 whole dried red chilies
* Cornstarch slurry (2 tsp cornstarch + ¼ cup water)
Instructions:
1. Toss the chicken with the salt, sugar, chili powder, pepper, sazon, and cornstarch until every piece is well coated.
2. In a bowl, whisk together all of the sauce ingredients except the cornstarch slurry. Set aside.
3. Heat oil in a wok or skillet and fry the chicken until crispy and golden. Transfer to a paper towel-lined plate.
4. Carefully drain all but 1 tablespoon of oil. Fry the dried chilies for about 30 seconds, then pour in the sauce.
5. Once bubbling, stir in the cornstarch slurry and simmer until thick and glossy.
6. Add the crispy chicken back to the pan and toss until every piece is coated.
