Strawberries & Cream frosted cookies
Cookies:
1 box white cake mix
2 eggs
1/2 cup oil
2 tsps vanilla extract
Red/pink food coloring
Add cake mix to mixing bowl. In a separate bowl, use whisk to combine eggs and vanilla extract until smooth. Add eggs and oil to cake mix, using spatula to stir until smooth. Slowly stir in food coloring until desired color of pink. Scoop dough into balls and drop onto parchment paper lined baking sheet. Bake for 8-10mins at 350 degrees. Let cool for 15mins before frosting.
Frosting:
4 cups powdered sugar
1 cup softened butter
1/4 cup pureed strawberries
1 tsp vanilla extract
Use hand mixer to combined butter, strawberry puree, and vanilla extract until smooth. Slowly add in powdered sugar until light and fluffy.
