Using salad shrimp ensures that every bite contains shrimp, adding protein and sweetness to the dish. Incorporating extra firm tofu and letting cod cook gently in the sauce enhances the texture and protein variety, making it more filling and satisfying. The inclusion of diverse vegetables like water chestnuts, bamboo shoots, baby corn, soaked green lentils, bell pepper, and onion not only brings in color but also a healthy mix of vitamins, minerals, and fiber. The use of two bottles of Thai red curry paste, such as the ARDE Lemongrass ready-to-use variety seen in the images, provides richness and depth of flavor. This paste is gluten-free and fresh for weeks when refrigerated, making it a convenient pantry staple for curry lovers. The sautéing process with ginger, garlic, Thai chili peppers, and lime zest elevates the aroma and spiciness, perfectly balanced by creamy coconut milk and the umami taste of patis (Filipino fish sauce). Simmering the ingredients for 30 to 45 minutes allows the flavors to meld beautifully, producing a fragrant, spicy, and creamy curry. Finishing with a squeeze of lime wedges adds a refreshing citrusy brightness that complements the intense spices. For those looking to adapt this recipe, you can control the heat by adjusting the amount of Thai chili peppers or substitute vegetables based on what's seasonal or preferred. The use of soaked green lentils offers a unique twist, adding a hearty texture and making the curry more nutritious and filling. Whether you’re a fan of Thai cuisine or trying to make a quick meal with minimal fuss, this shrimp curry recipe is approachable and delicious. It’s perfect for weeknight dinners or meal prep, delivering bold flavors and a comforting warmth in every serving.
