This natural leavening agent combines wild yeast and bacteria found in the flour and air, which requires patience and regular feeding. I found that feeding my starter daily with equal parts water and flour kept it active and bubbly—key signs that it’s ready for baking. When it comes to baking, I learned that timing and temperature play critical roles. For example, bulk fermentation at room temperature allows the dough to develop flavor and structure, while cold-proofing in the fridge overnight enhances the bread's tangy taste and texture. Using a Dutch oven or baking stone helps achieve a crisp crust that sourdough enthusiasts love. Troubleshooting is part of the learning curve. Issues like dense crumb or poor rise often stem from underproofing or an inactive starter. Keeping a baking journal helped me track what worked and what didn’t, adjusting hydration levels and fermentation times accordingly. Overall, sourdough baking is a rewarding process that combines science and creativity.
