At just 2½ years old, she’s already convinced she runs the kitchen around here. She loves stirring ingredients, sneaking little taste tests, and proudly announcing that she’s “cooking” whenever she climbs onto her kitchen stool.
This Creamy Street Corn Ranch Dip was one of those happy accidents that turned into an instant family favorite. I was looking for a quick snack to throw together for a summer afternoon when Chef Maddy and I started mixing ingredients we already had on hand.
The result? A creamy, tangy, slightly spicy dip packed with sweet corn, fresh cilantro, jalapeño, lime, and ranch flavor. It’s the perfect appetizer for pool days, cookouts, family gatherings, or honestly just sitting on the porch with a bag of chips.

Creamy Street Corn Ranch Dip
Ingredients
* 1 (16 oz) container sour cream
* 1 packet ranch seasoning mix
* 1 can whole kernel corn, drained
* 1 large jalapeño, finely diced
* Handful of fresh cilantro, finely chopped
* Juice of 1 whole lime
* Tajín seasoning, for garnish
Instructions
1. In a large bowl, combine the sour cream and ranch seasoning until smooth.
2. Stir in the drained corn, diced jalapeño, chopped cilantro, and fresh lime juice.
3. Mix until all ingredients are evenly combined.
4. Transfer to a serving bowl.
5. Sprinkle the top with Tajín.
6. Refrigerate for 30 minutes before serving to let the flavors come together.
