Ww 1 Point Chicken Veggie Soup
1 point excludes noodles and crackers. Noodles and crackers adds 8 points if you add one serving of each. You could definitely add a lower point pasta option and skip crackers. I boil the noodles for my family on the side. I personally skip the noodles and crackers. This soup is plenty filling without it!
1 bag spinach
1 bag baby carrots cut in half (boil on side alone)
16 little potatoes left whole (boil on side alone)
2 32oz boxes reduce sodium chicken broth
1 can no salt added green beans
1 pack mushrooms sliced
1 small onion diced
4 chicken tenderloins
Adobo, garlic, parsley to taste
1 bell pepper
Makes apx. 10 servings
Add or substitute and veggies you please! Just be mindful of starchy veggies adding point
Tip: Instead of using butter to saute the chicken onion and garlic i use just enough chicken stock to cover the bottom of the pot
