The Best Pappadeaux Inspired Creamy Seafood Pasta

If you love rich, creamy Cajun seafood pasta, this homemade version hits every note — smoky andouille, blackened chicken thighs, colossal shrimp, lump crab, and that ultra-smooth cream sauce made with fresh deli mozzarella.

My tips:

• Use chicken thighs, not breast

• Season in layers to your liking

• Let the sauce thicken before serving

• Fresh cheese melts better than pre-shredded

This one is heavy, creamy, flavorful, and perfect for Sunday dinner.

🚨Ingredients🚨

Pasta

• 1 lb rigatoni (or penne)

Proteins

• 2–3 blackened grilled chicken thighs, sliced

• 1 link andouille sausage, sliced

• 1 lb colossal shrimp (peeled & deveined)

• 1 cup lump crab meat

Cream Sauce

• 1 cup heavy whipping cream

• 4 oz cream cheese (softened)

• 1–1½ cups shredded Post Oak deli mozzarella (H-E-B)

• ½ cup shredded double pepper cheese

Seasoning

• 1–2 tsp blackened seasoning

• ½ tsp garlic powder

• ½ tsp onion powder

• Sea salt & black pepper to taste

Add-Ins

• 1–2 handfuls fresh spinach

👩🏾‍🍳 Instructions

Cook the Pasta

Boil pasta in salted water until al dente. Drain and set aside.

Brown the Sausage

In a large skillet over medium heat:

• Cook sliced andouille until browned and slightly crispy.

• Remove and set aside.

This builds that smoky Cajun base flavor.

Cook the Shrimp

Season shrimp lightly with:

• Blackened seasoning

• Garlic powder

• Onion powder

• Salt & pepper

Sear 2–3 minutes per side until pink and slightly golden.

Remove immediately — do not overcook.

Blacken the Chicken

If not already cooked:

Season chicken thighs generously with blackened seasoning.

Cook in skillet until fully done and slightly charred.

Slice into strips.

Make the Cream Sauce

Lower heat to medium-low.

Add to skillet:

• Heavy whipping cream

• Cream cheese

Stir continuously until smooth and creamy.

Add:

• Mozzarella

• Double pepper cheese

Stir until melted and thickened.

Add additional blackened seasoning to taste.

Low heat is key here. High heat will break the sauce.

Bring It All Together

Add:

• Spinach (let wilt)

• Crab meat (fold gently — don’t break it up)

• Shrimp

• Chicken

• Sausage

• Pasta

Toss everything until fully coated in sauce.

Rest & Serve

Let the pasta sit 5–10 minutes before serving.

This allows the sauce to thicken and cling to the pasta.

Top with extra mozzarella if desired

I like to add some personal touches that deepen the flavor and texture of the dish. For instance, while the recipe calls for blackened chicken thighs, marinating the chicken in a little extra Cajun seasoning and lemon juice for 30 minutes beforehand really boosts the spice profile and tenderness. When cooking the shrimp, I've found that searing them in a cast-iron skillet helps achieve a nicer char and smoky flavor, enhancing the overall Cajun experience. Also, while the recipe suggests fresh deli mozzarella from H-E-B, you can experiment with smoked mozzarella for a subtly smoky note that complements the andouille sausage well. Adding fresh spinach is a great way to balance the richness of the sauce, but you can also toss in some sautéed bell peppers or onions for extra sweetness and color. Letting the pasta rest for about 10 minutes after coating it in the creamy sauce is crucial—it allows the sauce to thicken properly and cling beautifully to each rigatoni or penne piece. A tip I’ve learned is to reserve a bit of pasta cooking water before draining; whisking a small amount into the sauce can help achieve the perfect silky consistency. If you want to elevate the dish even further, topping it off with freshly chopped parsley and a squeeze of fresh lemon juice right before serving brightens up the flavors and adds a fresh aroma. This recipe is a wonderful way to bring the bold flavors of Cajun seafood pasta into your home kitchen, delivering that indulgent, creamy texture and a loaded taste that’s better than many takeout options. It’s ideal for sharing with friends and family on a cozy weekend evening.
