Protein Packed Blueberry & Banana Pancakes 🫐🍌🥞

Not only are these mini pancakes adorable but they are packed with over 20g of protein per serving! They also save surprisingly well so can definitely make 2-3 servings at a time and refrigerate. I ended up making these so often that I purchased a silver dollar pancake pan on Amazon so I can get that perfect shape & size every time!

Here’s all you need:

•Protein pancake mix (Any brand will do, I’ve used Kodiak and Birch Blenders before as well)

• Unsweetened almond milk

• Eggs

• Chia seeds

• Flax seeds

• Blueberries

• Bananas

• Maple Syrup

Six easy steps:

1. Pour all ingredients into a mixing bowl

2. Whisk together for 30 seconds

3. Use butter or non stick spray to season the pan

4. Pour out mix into mini pancakes

5. Flip over when golden brown

6. Garnish with blueberries, bananas & maple syrup

Tips:

⭐️ You may find it easier to flip the pancakes by lifting one edge with a fork and then being able to get the spatula underneath for the flip

⭐️ Spray pan with non stick before each batch of pancakes are poured out
