ingredients:

1/2 cup (paleo) pancake mix

1-2 tbsp ground flax seeds

1 tbsp cacao powder

1 tsp cinnamon

1/2 cup + 2 tbsp (dairy-free) milk, unsweetened

1 tsp vanilla extract

1/3+ cup chocolate chips/chunks

1/4 cup organic raspberries, mashed

directions:

1. Lightly grease a skillet with either coconut oil or (vanilla bean) ghee.

2. In a medium-sized bowl, combine the pancake mix, flax seeds, cacao powder, and cinnamon well.

3. Pour in the milk and vanilla, then stir until smooth.

4. Fold in the chocolate chips, then the fresh raspberries.

5. Over low-medium heat, scoop about 1/4 cup batter on the prepared skillet into about five pancakes.

6. Once each circle of batter starts bubbling on the top, flip it over for a final minute or two.

7. Drizzle creamy nut butter and manuka honey on top along with sprinkles of crunchy cacao nibs, or whatever toppings you’re craving!
