... Read moreHey everyone! I wanted to share one of my absolute favorite, super simple breakfast (or really, any meal!) ideas that I stumbled upon and now can't live without: Salchichas con Tomate. There's something incredibly comforting about the combination of savory sausages bathed in a rich, slightly spicy tomato sauce. It’s the kind of dish that feels hearty and fulfilling without requiring hours in the kitchen, which is perfect for my hectic schedule. I first tried a version of this during a trip and immediately knew I had to recreate it at home. It’s now my go-to when I want something flavorful fast! Why I Love This Recipe (and You Will Too!): Speedy: From start to finish, you're looking at about 20-25 minutes. Ideal for those rushed mornings or a quick weeknight dinner. Simple Ingredients: You probably have most of these in your pantry already. Bursting with Flavor: The fresh tomatoes, along with the onion and a kick from the chili, create a wonderfully balanced sauce. Versatile: While I call it a breakfast idea, it's honestly great any time of day. Here's My Easy Salchichas con Tomate Recipe: What You'll Need: 1 tablespoon olive oil 1 pound (about 450g) sausages (I usually go for pork sausages, but chicken or even plant-based works too!) 1 medium onion, finely chopped 2-3 cloves garlic, minced (optional, but highly recommended!) 1 small chili or jalapeño, deseeded and finely chopped (adjust to your spice preference, or omit for mild) 1 can (14.5 oz / 400g) diced tomatoes, undrained, or 2-3 large fresh tomatoes, chopped 1/2 cup water or chicken broth 1 teaspoon dried oregano (or a mix of Italian herbs) Salt and black pepper to taste Fresh parsley or cilantro, chopped (for garnish, optional) Let's Get Cooking! Brown the Sausages: Heat the olive oil in a large skillet or pan over medium-high heat. Add the sausages and cook until nicely browned on all sides and cooked through. This usually takes about 8-10 minutes. Once done, remove them from the pan and set aside. You can slice them now or after they've simmered in the sauce. Sauté Aromatics: Reduce the heat to medium. Add the chopped onion to the same pan (no need to clean it, those delicious bits add flavor!). Sauté for 3-5 minutes until softened and translucent. If you're using garlic and chili, add them now and cook for another minute until fragrant, being careful not to burn the garlic. Build the Sauce: Pour in the diced tomatoes (with their juices) and the water or broth. Stir in the dried oregano. Bring the mixture to a gentle simmer, scraping up any browned bits from the bottom of the pan. This is where all the flavors really start to meld together! Simmer and Season: Return the cooked sausages (sliced or whole) to the pan. Season with salt and black pepper. Cover the pan and let it simmer for about 10-15 minutes, allowing the flavors to deepen and the sauce to thicken slightly. If you prefer a thicker sauce, you can uncover it for the last few minutes. Serve It Up! Once the sauce is reduced to your liking and the sausages are heated through, your Salchichas con Tomate are ready! I love serving this with some crusty bread to soak up all that delicious sauce, or alongside some fluffy rice or even scrambled eggs. It's also fantastic wrapped in a warm tortilla. My Little Tips & Variations: Make it Creamy: A splash of heavy cream or a dollop of cream cheese at the end can make the sauce extra luxurious. Add More Veggies: Feel free to toss in some chopped bell peppers (any color!), zucchini, or even spinach in the last few minutes of simmering. Spice It Up: If you love heat, add more chili, a pinch of red pepper flakes, or a dash of your favorite hot sauce. This Salchichas con Tomate recipe is truly a gem in my cooking repertoire. It’s proof that simple ingredients can create incredibly satisfying meals. I hope you give it a try and love it as much as I do! Let me know how it turns out for you in the comments!
