... Read moreThis Savory Onion & Potato Soup has become a true comfort food staple in my kitchen, especially when I'm looking for a simple yet incredibly satisfying warm cozy meal for dinner. While the basic recipe is fantastic, I've picked up a few tricks along the way to make this simple potato and onion soup recipe even more delicious and practical for busy weeknights. First, let's talk about those onions – they're the heart of this Savory Onion & Potato Soup. The magic really lies in perfect caramelization. Don't rush this step! Cooking sliced onions slowly over medium-low heat for at least 20-30 minutes, stirring occasionally, is absolutely crucial. They'll transform from pungent to sweet and deeply savory, forming the rich flavor foundation of your potato onion soup. A splash of water or a little vegetable broth towards the end can help deglaze the pan and ensure all those delicious, browned bits are incorporated, adding an extra layer of depth to your broth. To make your potato soup recipe even richer, consider using a high-quality vegetable or chicken broth instead of just water with bouillon, or a mix of both. While “Better than Bouillon” is great, a full-bodied broth can truly elevate the taste, making it feel like a gourmet warm cozy meal for dinner without extra effort. For a naturally creamier texture without adding dairy, once the potatoes are tender, you can mash about a quarter of them directly in the pot. This simple trick thickens the soup beautifully and releases their starch, giving it a wonderfully velvety mouthfeel. Want to customize your onion and potato soup? There are so many easy ways to make it your own! A sprinkle of fresh thyme or rosemary at the end can add an aromatic touch. For a heartier version, crispy crumbled bacon, ham, or even some leftover shredded chicken can be stirred in. If you’re a cheese lover, a generous topping of shredded cheddar, Gruyère, or Parmesan cheese right before serving, letting it melt into the warm soup, is an absolute game-changer. It turns a simple potato onion soup into an indulgent treat! This simple potato and onion soup is also a fantastic make-ahead meal. It often tastes even better the next day as the flavors meld together, deepening its savory qualities. You can store it in an airtight container in the refrigerator for up to 3-4 days. It also freezes well for up to 3 months, making it perfect for meal prepping. Just thaw overnight in the fridge and reheat gently on the stovetop, adding a splash of broth or water if it's too thick. For a complete warm cozy meal for dinner, I love to serve it with a side of crusty bread for dipping, or a simple green salad with a light vinaigrette to balance the richness. It’s truly a wholesome and comforting dish that nourishes both body and soul, perfect for any evening.
