Caramelized Onion Stuffed Mushrooms
Ingredients:
- 1 yellow onion, finely chopped
- 1-2 lbs cremini mushrooms
- 2 cloves minced garlic
- Handful of chopped parsley
- 2 tbs Worcestershire sauce
- 1-2 tbs butter
- 1/3 cup breadcrumbs
- 1/4 cup cream cheese
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
Preheat oven to 400 degrees Fahrenheit.
Remove stems from mushrooms. Finely chop the stems and set those aside.
Melt butter in a pan over medium heat. Add onions and season with salt, and let cook until caramelized. Add garlic and Worcestershire sauce and stir for about 1 minute. Add chopped mushroom stems and let cook until browned. Add breadcrumbs and cook for about 3-4 minutes. Remove from heat.
In a bowl, combine cream cheese, Parmesan, parsley, and breadcrumb mixture. Fill mushrooms with filling.
Bake stuffed mushrooms for about 20-25 minutes.
