What you’ll need:
- 1 butternut squash, peeled and diced
- 0.5-1lb Brussels sprouts, halved
- 1 head of cauliflower
- 1 fresh sprig of rosemary
- 1 fresh sprig of thyme
- Olive oil, enough to cover your veggies
- A large pinch of salt
- A large pinch of pepper
Bake at 425F for 45-55 mins. I recommend drizzling honey on top when the veggies come out of the oven. Enjoy! :)
