Vanilla Cupcake Recipe

This Recipe is for 24 cupcakes!

Batter

* 3 cups all purpose flour

* 2.5 cups of granulated sugar

* 4 Large brown eggs

* 3.5 tbsp Baking powder

* 1 cup buttermilk

* 1/3rd cup Vegetable oil or Canola

* 4 tbsp Vanilla Extract

* 6.5 cups of water

* Half a spoon of Salt

* 2 tbsp Baking soda

Whipped cream Recipe

* 4 cups of Heavy whipping Cream

* 12 tbsp of confection sugar(powder)

* Splash of Vanilla Extract

* 6 tbsp of instant vanilla pudding

Instructions

* In a bowl, combine flour, baking powder, baking soda and salt. Set aside,In the bowl of a stand mixer with the whisk attachment, whip the egg with sugar until light and fluffy,add the oil, followed by the buttermilk, water, and vanilla extract.add the flour mix to ensure you have a smooth batter. (don't overmix)

Divide the batter between 24 cupcake liners. Set a side and Pre heat oven at 325 degrees.

* Bake until top is kissed golden or stick a fork, if it comes out clean it’s done! Let cool until it’s cool enough not to melt the whipped cream!

* In a stand Mixer pour whipping cream,powder sugar, splash of vanilla extract, and the instant vanilla pudding.

* Start the mixer on Low for 5-7 minutes then turn up high for 10-15.

* Take a spoon of whipping cream mix and turn it around and see if it falls off, if it sticks it’s good to go!

* Sprinkle cinnamon powder on top of the cream once the cupcake has cooled down.
