Stir Fry

Ingredients

10 oz cooked 90–94% lean ground beef

(5 oz per serving = full Lean)

1 cup bell pepper, sliced

1 cup zucchini, chopped

1 cup cherry tomatoes

4 tbsp diced onion

6 large Kalamata olives, sliced

1 tsp oregano

½ tsp cumin

½ tsp paprika

Salt & pepper to taste

2 tbsp reduced-fat feta cheese

Fresh parsley for garnish (optional—but recommended)

How to Make It

1. Heat a dry nonstick skillet and sauté the onion and garlic—no oil needed.

2. Add the lean ground beef, cook until browned, and drain off excess fat.

3. Toss in the bell pepper, zucchini, and tomatoes; cook until tender.

4. Season with oregano, cumin, paprika, salt, pepper, and add the olives.

5. Remove from heat and finish with feta and fresh parsley.

6. Divide into two plates.
