This is one of my favorite soups..... I make it in the crock pot and its super easy.... I make mine Gluten Free I skip the flour, it’s not really needed and use GF Broth. I do think this Better than Olive Garden's!

Crock Pot Zuppa Toscana (better than Olive Garden!)
1lb. Italian sausage (use spicy to get that signature Olive Garden flavor) I use 1-2 tubes
4-6 russet potatoes, chopped ( or a bag of the baby potatoes, cut up).
1 onion/chives, chopped 1/4 c. REAL bacon pieces (optional) 2 Tbsp minced garlic (about 3-4 cloves) 32 oz. chicken broth 1 c. kale or Swiss chard, chopped 1 c. heavy whipping cream 2 Tbsp flour ( optional)
1. Brown sausage in a sauté pan and drain.
2. Place sausage, chicken broth, garlic, potatoes and onion in slow cooker. Add just enough water to cover the vegetables and meat.
3. Cook on high 3-4 hours (low 5-6 hours) until potatoes are soft.
30 minutes before serving:
4. Mix flour into cream removing lumps. Again flour is optional.
5. Add cream, kale, and bacon to the crock pot, stir.
6. Cook on high 30 minutes or until broth thickens slightly.
7. Add salt, pepper, and cayenne to taste.

For the sausage, I highly recommend using a good quality spicy Italian sausage. That little bit of heat is crucial for the signature Zuppa Toscana kick. If you're not into spice, a mild Italian sausage works perfectly, and you can always add a pinch of red pepper flakes at the end to adjust the warmth to your liking. And those potatoes? Speaking of creaminess, for that luscious, rich consistency, don't skimp on the heavy whipping cream! If you're like me and often skip the flour for a gluten-free version, a simple cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) added at the end can help achieve that perfect, slightly thickened broth without any gluten.
