• 2 lbs ground beef

• 4 slices of bread

• 3 eggs

• ½-1 cup milk (enough to soak the bread)

• 1 bunch fresh Italian parsley, chopped

• 6 oz shredded/shaved Parmesan cheese

• Seasoning salt, to taste (~2 tbsp) measure with your heart

• Bacon, enough to cover meatloaf

• Sauce:

• Equal parts ketchup & brown sugar (make enough for basting & leftovers)

• 1 tbsp ground mustard

• Dash of seasoning salt

Directions

1. Prep the bread: Soak the bread in milk until fully saturated.

2. Mix the meatloaf: In a large bowl, combine ground beef, soaked bread, eggs, parsley, Parmesan, and seasoning salt. Mix well.

3. Form the loaf: Shape into a rectangle ~1.5 inches thick. Place on a baking sheet (rack recommended to drain fat).

4. Wrap in bacon: Cover the loaf tightly with bacon, tucking ends under.

5. Make the sauce: Mix ketchup, brown sugar, ground mustard, and seasoning salt.

6. Bake in stages:

• Oven at 385°F for 40 min.

• Remove, baste with sauce, bake 25 min more.

• Remove, baste again, increase oven to 400°F, bake 20 min more.

7. Rest: Let meatloaf rest 10–15 min before slicing.
