Marinade

Blend until smooth:

* ¼ cup dark soy sauce

* ¼ cup white vinegar

* Juice of 1 orange

* 1 whole lime

* 1 bunch green onions

* 1 red onion

* 1 chunk fresh ginger

* 8–10 garlic cloves

* 1 Scotch bonnet or habanero

* 1 tbsp garlic powder

* 1 tbsp onion powder

* 1 tsp smoked paprika

* 2 tsp cinnamon

* 2 tsp allspice

* 2 tsp nutmeg

* Few sprigs thyme

Instructions

1. Blend marinade and reserve ¼–½ cup for the glaze.

2. Marinate chicken overnight (breasts, thighs, drumsticks, or any combination).

3. Bake at 385°F until cooked through.

Sticky Glaze

Simmer until thick:

* ¼–½ cup reserved marinade

* ½ cup BBQ sauce

* ½ cup honey

* Splash of water if needed

Brush over chicken and broil until sticky and caramelized.
