This oven-baked Italian sausage with peppers and onions is a true go-to recipe for busy weeknights or casual gatherings. What I love most about it is how easy it is to prepare yet how much depth of flavor it delivers. Using a combination of hot and sweet Italian sausages balances the spice and sweetness perfectly, making the dish appealing to all palates. The use of taco seasoning is a clever twist that adds a smoky, zesty flavor without overpowering the natural taste of the sausage and vegetables. If you want to experiment, you can swap taco seasoning for Cajun or Italian seasoning blends, which also complement the peppers and onions beautifully. Adding garlic seasoning and optional Tony’s seasoning gives the dish an extra layer of savory complexity. One tip I’ve found useful is to toss everything well before baking to ensure the spices coat each piece evenly. Also, stirring halfway through baking helps the vegetables soften evenly and caramelize slightly, bringing out their sweetness. Besides being delicious on its own, this sausage and vegetable bake makes a great filling for sandwiches or a hearty topping for rice or pasta. Leftovers reheat well, and flavors even deepen after a day or two. Incorporating colorful bell peppers gives the dish a vibrant visual appeal and adds a nutritional boost, packed with vitamins and antioxidants. Slicing the peppers and onions into strips not only ensures quick cooking but also maximizes flavor absorption. Overall, this recipe is perfect for those who want a fuss-free, crowd-pleasing meal that can be customized with spices and sausages of choice. The balance of savory sausage, sweet and tender peppers and onions, and warm seasoning makes it a satisfying and versatile dish to keep in your cooking rotation.
