Swim Queso Chicken
Ingredients
* Cooked chicken, chopped or shredded — leftover chicken or a rotisserie chicken works great too
* 1 packet taco seasoning
* 1 jar salsa
* 2 packs Knorr Mexican Rice
* 4 cups chicken broth
* 2 cups Colby Jack cheese, shredded
* 1 tub Gordo’s queso
* 1 small can diced jalapeños
* Tony’s seasoning, salt, pepper & garlic powder, to taste
* Tortilla chips, for serving
* Green onions, for serving
Directions
1. Cook your chicken. Season with Tony’s, salt, pepper and garlic powder. Once cooked, chop or shred it. You can also use leftover chicken or shred a rotisserie chicken.
2. Preheat your oven to 350°F.
3. In a 9×13 baking dish, add:
* 2 packs Knorr Mexican Rice
* 1 jar salsa
* 1 packet taco seasoning
* 4 cups chicken broth
Give everything a good mix.
4. Add your cooked chicken and mix it in.
5. Sprinkle 2 cups Colby Jack cheese evenly over the top.
6. Cover the dish very tightly with foil.
7. Bake at 350°F for 50 minutes.
8. While the casserole is baking, microwave the Gordo’s queso for about 1½ minutes. Stir it well until smooth.
9. Mix the diced jalapeños into the queso.
10. When the casserole comes out of the oven, pour the jalapeño queso all over the top.
