Meal prep for the Week

I have really been in my wellness era this year and loving different salads which have been keeping me so full and satisfied throughout the day.
1, 2, 3, let’s go!
•Lemon, ginger, tumeric shots first thing in the morning - so good for immunity and gut health!! I’ve been loving adding this to my morning routine :)
• Breakfast: no real prep for this meal since I had some granola on hand but otherwise I would prep my granola.
- Greek Yogurt
- Homemade Granola
- Apple slices - tip* a little bit of lemon juice on the slices will prevent them from browning
• Lunch: Green Goddess Salad
- Chopped iceberg lettuce
- Pickled red onions
- Green Goddess dressing (Panera copy cat)
- Hard boiled egg (1 per day)
- Cucumber
- Tomatoes
- Rotisserie chicken
- Avocado
• Lemon slices for my water during the day
• Celery & hummus cups for a mid day snack
I also had made some banana bread for us as a dessert this week
Lastly, I threw this pot roast from Aldi in the crock pot when I first started my meal prep to have for dinner tonight - this was delicious!!

Hey everyone! If you're anything like me, busy weeks can make healthy eating a real challenge. That's why I've fallen in love with weekly meal prepping! It's not just about saving time; it's about setting myself up for success, ensuring I have nourishing, delicious meals ready to go, and sticking to my wellness goals without the daily stress. One of the biggest game-changers for me has been getting organized with my meal prep containers. Seeing all my ingredients laid out on the kitchen counter, neatly portioned, truly motivates me. I use a mix of glass containers for my main meals and smaller plastic ones for snacks and dressings. For instance, my breakfast components – creamy Greek yogurt, my crunchy homemade granola, and perfectly sliced Cosmic Crisp apples (with a little lemon juice to prevent browning, a total lifesaver tip!) – are all ready to assemble each morning. It makes such a difference to just grab and go during the morning rush. Lunch is often the trickiest meal to keep healthy when you're out, so I focus heavily on prepping my Green Goddess Salad. I found that keeping the components separate until I'm ready to eat prevents everything from getting soggy. So, I'll have my crisp iceberg lettuce in one container, my vibrant pickled red onions in another (they add such a fantastic zing!), and then pre-chopped cucumber and cherry tomatoes. My proteins, like hard-boiled eggs and shredded rotisserie chicken, are also prepped and ready. I keep my homemade Green Goddess dressing in a small separate jar, and my avocado is sliced fresh right before eating. This way, I get that satisfying, fresh salad experience every time! Beyond meals, I've also incorporated easy-to-prep wellness boosters. Those lemon, ginger, turmeric shots are fantastic for immunity and gut health, and having a batch ready means I never miss my morning dose. For mid-day cravings, I always have my celery sticks and little roasted red pepper hummus cups portioned out. It’s such a practical and healthy snack that keeps me full until dinner. And don't forget the hydration! Pre-sliced lemon wedges for my water bottle make staying hydrated so much easier and tastier throughout the day. Even dinners can be simple. This week, I tossed a Tyson pork roast with vegetables into the slow cooker while I was prepping everything else. Coming home to a delicious, ready-made dinner is pure joy! My top tips for anyone looking to dive into meal prep? Start with a simple plan, focus on components you love, invest in good meal prep containers, and don't be afraid to use shortcuts like rotisserie chicken or pre-chopped veggies. Every time I see things like this I think it must be nice to only have to worry about what you eat or haven those who eat similar because I support 3 ppl on one income and we all eat different lol 😂
