Sunday Meal Prep ✨

Happy Sunday Friends!! 💃🏼 🪩

Let’s get into some meal prep today!

Breakfast: overnight oats

1/2 cup oats

1 scoop protein powder

1 spoonful (not packed) brown sugar

Chia seeds (split pack 5 ways)

A generous dash of cinnamon

1/2 cup milk (or milk alternative)

Dash of vanilla

(Add peanut butter on top before eating)

this is for EACH container! Mix the dry ingredients first, then add in the milk and vanilla. Make sure to mix well!! I add a spoonful of pb on top the morning I eat as well as an extra dash of cinnamon. Sometimes I will bring a fruit with me to work in case I’m still hungry.

Lunch: teriyaki meatballs with veggies

Teriyaki Meatballs:

1 lb ground turkey

1 egg

1/2 cup breadcrumbs

1/2 tsp minced garlic

Chopped green onion

A spoonful of the spices from Trader Joe’s Chili Crunch spread

- Mix all the ingredients and use a cookie scooper to scoop into balls.

- Bake at 400° for 15 mins, flip over and bake for another 10 mins

Sauce:

Teriyaki sauce (about 1/3 cup-ish)

Sesame oil (a few splashes)

Spoonful of the crunchy chili onion

The whites of green onion stalks

A dash of maple syrup

A little bit of minced garlic

-Mix all ingredients and before meatballs are done, heat on the stove on low heat and then toss meatballs in it in a bowl

-Served over rice with veggies

Easy Meal Prep
I usually do my meal prep on Sunday. It takes about 1 hour to get everything prepped/cooked and put into containers. I make 5-6 meals for breakfast, lunch, and dinner. Saturday and Sunday I don’t necessarily plan ahead for those days so I eat whatever I am feeling. Meal planning never works for me
