Quick + Easy Meal Ideas for Busy Weeknights

Quick + Easy does NOT have to mean everyone is eating garbage, hitting the drive thru or raiding the concession stand on those crazy busy weeknights with all the kids extracurricular activities.

1. Hawaiian roll sliders: fan favorite here- lunch meat of your choice, cheese, and topped with brown sugar + butter. Pop them in the oven and watch them disappear.

2. One Pan Chicken + Pasta: I shared this the other day, but just change up the seasonings you use and the pasta you use- it makes it a whole new meal every time you make it.

3. Freezer meals: I live by the phrase “one for the oven + one for the freezer” because if I’m going to be cooking something super involved anyways, why not just double the recipe and save my future self a night of cooking?

4. Breakfast for dinner: so quick, so easy, so good every time.

5. Snack Tray: ok this one is a lazy mom hack but if you have protein, fruits, veggies and carbs then it technically counts as a meal, right?

6. Crockpot meal: plan ahead, start dinner in the morning before the day gets away from you and then it’s ready to serve before you’re rushing out the door later.
