Baked Raspberry Cheesecake Protein Bars🍰
Makes: ~12 bars
Ingredients:
• 1 cup nonfat Greek yogurt
• 1 cup cottage cheese, blended smooth
• 1/2 scoop vanilla protein
• 2 eggs
• 1/4 cup sugar-free maple syrup
• 1 tsp vanilla extract
• 1 cup frozen raspberries
• 1/4 tsp xanthan gum
• optional: drizzle of white chocolate
Instructions:
1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
2. Blend the base:
• In a blender or food processor, combine Greek yogurt and cottage cheese until smooth.
• Add eggs, sugar-free maple syrup, and vanilla extract. Blend until fully combined. Add protein powder.
3. Add xanthan gum:
• Gradually sprinkle in xanthan gum (1/4 tsp) while blending to prevent clumping. This will help thicken the mixture and give it a creamy, cheesecake-like texture.
4. Fold in raspberries:
• Gently fold in the frozen raspberries with a spatula. The mixture may streak slightly with pink—this is normal.
5. Bake:
• Pour the mixture into the prepared pan and smooth the top.
• Bake for 30–35 minutes, or until edges are set and the center slightly jiggles.
6. Cool and chill:
• Let the bars cool at room temperature for 10–15 minutes.
• Refrigerate for at least 2 hours (or overnight) to firm up.
7. Slice and serve:
• Cut into 12 bars. Optional: top with a drizzle of white chocolate.
Blueberry Spinach Protein Pancakes🫐🥞
Ingredients
16 grams Kodiak pancake mix
1 scoop vanilla or blueberry protein powder
1 tbsp ground flaxseed
1 tbsp chia seeds
Handful of spinach
1/2 tsp baking powder
Cinnamon
85 grams liquid egg whites
55mL unsweetened vanilla almond milk
