Spring sheet pan meal

Salmon, sweet potatoes and Brussel sprouts are always a trio for me, something about them goes together. With Spring here, we are outside a lot more and it can be very easy to just want to grab something out. This is a minimal prep, ready in under 45 minutes meal. I used avocado oil and The Blend from @Kinder’s, which is a blend of salt, pepper, and garlic. I also added @Mikeshothoney to the brussel sprouts! It was delicious and we have left overs!

Read moreSheet pan meals are a fantastic way to prepare a wholesome and balanced dinner with minimal cleanup, especially in the busy (yet beautiful) springtime when we want to spend more time outdoors. What really elevates this meal is the use of fresh, seasonal ingredients like salmon, sweet potatoes, and Brussels sprouts, which not only pair well together but also provide a rich combination of flavors and nutrients. The salmon offers high-quality protein and omega-3 fatty acids that support heart health, while sweet potatoes bring in dietary fiber and vitamin A, and Brussels sprouts add a crunchy texture with vitamins C and K. Using avocado oil is a great choice for roasting because it has a high smoke point and a neutral flavor that enhances the natural taste of the vegetables and fish without overpowering them. The seasoning blend mentioned, which combines salt, pepper, and garlic, creates a simple but effective way to bring out the savory notes in the dish. Adding a touch of honey or a drizzle of a flavorful honey-based sauce on the Brussels sprouts can introduce a subtle sweetness that balances their natural bitterness. In my own experience preparing similar sheet pan meals, I find that spacing ingredients evenly on the pan ensures the salmon cooks evenly, and vegetables roast to a tender-crisp finish. Preheating the oven properly and choosing uniform-sized vegetable pieces also makes a noticeable difference. Plus, leftovers taste just as wonderful the next day, making this an ideal meal prep option. For added variety, consider experimenting with fresh herbs such as thyme or rosemary sprinkled on top before roasting, or add a squeeze of fresh lemon juice just before serving to brighten the flavors. This meal’s simplicity and versatility are why it’s perfect for spring evenings, allowing more time outside without sacrificing a nutritious and satisfying dinner.
