Ingredients
• 2 cups prepared mac and cheese (leftovers or fresh)
• 1 cup shredded cheese (cheddar, mozzarella, Colby Jack, or a blend)
• 4 large flour tortillas
• 2 tablespoons butter
• Optional add-ins:
• Cooked bacon bits
• Diced ham
• Pulled chicken
• Jalapeños
• Hot sauce

Instructions
1. Heat your skillet
• Place a large pan or griddle over medium heat.
2. Butter the tortillas
• Lightly butter one side of each tortilla.
3. Assemble
• Place one tortilla, butter-side down, into the pan.
• Add:
• ½ cup mac & cheese
• A sprinkle of shredded cheese
• Any optional add-ins
• Spread it out evenly.
• Top with another tortilla, butter-side up.
4. Cook
• Cook for 2–3 minutes until golden and crispy.
• Flip carefully and cook another 2–3 minutes until the cheese is fully melted and the outside is crispy.
5. Slice & serve
• Remove from pan, let sit for 1 minute, then slice into wedges.
