There's just something magical about perfectly fried chicken flats, isn't there? For me, it's the ultimate comfort food. I mean, who can resist those golden brown, crispy pieces with absolutely no dark spots? It's a culinary dream come true, and I'm here to share my journey to achieving that dream right in my own kitchen. I used to struggle with getting my fried chicken just right. Sometimes it was too soggy, other times unevenly cooked, or worse – burnt in some spots while raw in others. But after countless attempts and a lot of trial and error (and a few burnt batches, let's be honest!), I've finally perfected my technique, especially for those coveted flats. They're just superior in my opinion; more surface area for that incredible crispy skin, and so much easier to eat than drums. First things first, the secret to that uniformly cooked, golden perfection starts even before they hit the oil. I always give my flats a good soak, usually in a buttermilk brine overnight. This tenderizes the meat and helps the seasoning adhere. Then, it's all about the dredge. My go-to is a seasoned flour mix – think paprika, garlic powder, onion powder, a good amount of salt and pepper, and a pinch of cayenne for a little kick. For extra crispiness, I sometimes do a double dredge: floured, then dipped back in buttermilk (or an egg wash), and floured again. This creates those beautiful craggy bits that get extra crunchy. Now, for the frying itself. This is where most people go wrong. The oil temperature is paramount. I aim for a consistent 350-375°F (175-190°C). Too low, and your chicken will be greasy; too high, and it'll burn before it's cooked through. And never, ever overcrowd your pan or fryer! This drops the oil temperature too much and prevents those pieces from getting that desired golden brown and crispy exterior. I always fry my flats in batches, ensuring each piece has enough space to cook evenly. For that 'fried hard' texture, I let them cook for about 6-8 minutes per side, or until they're deeply golden brown and the internal temperature reaches 165°F (74°C). You'll notice they start floating to the top when they're almost done. Once they’re out, I immediately transfer them to a wire rack set over a baking sheet – never directly onto paper towels, as this can steam them and make them lose their crispness. This allows excess oil to drain off while keeping them perfectly crispy.
