... Read moreI absolutely adore this 5-ingredient chicken stuffing casserole because it's genuinely one of those recipes that saves dinner on a busy night! It truly delivers on being a 'quick and easy chicken casserole with few ingredients.' After making it countless times, I've picked up a few extra tips and tricks that I think fellow home cooks will appreciate, especially if you're looking for ways to jazz up stove top stuffing or make dinner with shredded chicken even simpler. First off, let's talk about the box of chicken stuffing mix. While super convenient, you can easily elevate it! Instead of just water, try using chicken broth for a richer flavor. I sometimes sauté a quarter of an onion and a stalk of celery until softened, then mix them into the prepared stuffing along with a pinch of poultry seasoning. It makes the prepared chicken stuffing taste much more homemade without adding much extra effort, perfect for those company's coming chicken recipes moments. For the shredded chicken, using a store-bought rotisserie chicken is my ultimate shortcut – it makes this a true quick and easy chicken casserole. If I'm cooking chicken breast specifically for this, I often poach it or bake it, then shred it with two forks. A super fast hack? If you're really in a pinch, chunk chicken in a can can work, just make sure to drain it well! It keeps this chicken breast casserole incredibly adaptable. The can of cream of chicken soup is a hero ingredient for a reason! It provides that lovely, creamy yellow sauce base. Beyond this casserole, I often use it as a base for other simple chicken with cream of chicken soup recipes, like a chicken and rice bake or a quick pot pie filling. It's a pantry staple for easy comfort food. Don't be afraid to customize! While shredded Monterey Jack cheese is fantastic for that gooey, melted, bubbly cheese top, feel free to experiment. Cheddar, mozzarella, or a blend all work wonderfully. I’ve also tossed in a handful of frozen peas or corn with the shredded chicken layer for extra veggies. Sometimes, I sprinkle a little garlic powder and paprika into the soup for a bit more kick. And for a truly indulgent topping, those French fried onions mentioned in the original recipe are a game-changer – they add a fantastic crunch! Speaking of baking, ensuring your chicken casserole in oven reaches that perfect golden-brown top is key. If your cheese is browning too quickly but the casserole isn't heated through, you can loosely tent it with aluminum foil for the last 10 minutes. This ensures everything is piping hot and bubbly. Finally, while the original recipe suggests green beans or corn, I love serving this with a simple side salad to add some freshness and balance out the richness. It makes dinner with shredded chicken feel like a complete meal. This casserole is also great for meal prepping; you can assemble it ahead of time and bake it when you're ready, making weeknight dinners even smoother. Enjoy this incredible 5 ingredient chicken stuffing casserole – it's a winner every time!

I made this and it’s delicious! It’s also good with sharp white cheddar if you don’t like pepperjack cheese
