At the first step, when walking into the shop, do not rush to smell it. Stand and look at the shape of the ball first. Choose a plump, full, not so ugly, and then focus on the "durian pole." The old durian is ready to eat. The pole will look a little dry, and most importantly, the "leeches" (on the joints of the stem). It must look swollen, bulging, and start to have a clear split mark. If the pole is fresh, small or the leeches are tight, which means that it is cut when it is still weak. Buy to have the right to find a very high stiff texture. This is a warning. Must look carefully!
Once you find your favorite pole, the second step is to try to squeeze the thorns (be careful of sore hands, gradually do so). Use your thumb and index finger to squeeze the two ends of the thorns next to each other. A durian with a good texture. The shell will become thinner and flexible. When you squeeze it, you will feel that the thorns can bounce together a little like a light spring, but if you squeeze and stiff, you can't hurt your fingers. That is still raw. Put it in the store. Oh...The end of the old durian's thorns should be dark, dry, not green.
The third step, this one seems to be an Advance, but really, the practice of listening is not difficult, is to "knock." Try to borrow the vendor's knocking stick, try to knock gently after the durian. If it is knocked, the sound is "loose," solid, like knocking on the wall, which means that the meat is still on the shell. Dib sure! But if the sound "peeling," the circle is like knocking on an empty paper box, it is cooked to the flesh. The sound we are looking for is a sound that sounds "loose," there is a little reverberation, indicating that the durian meat has begun to glide out of the shell. Arriving at the last stage before scanning the money is sniffing and looking at the meat, try to smell it. The soft outer durian will have a mild aroma. It will not smell green and must not be so intense that it will feel sore nose. (If the alcohol hit the nose is messy), if the shop can penetrate the triangle to look even better, notice the color of the flesh must be pretty yellowish, and most importantly, "the skin of the durian must look dry," not shiny or greasy on the knife.
