**Ingredients:**

- 5 large eggs

- About 1/4 cup Kewpie mayonnaise

- About 3 tablespoons milk or cream

- Salt and pepper

- Soft white bread

- Butter

- Lettuce (optional)

**Instructions:**

1. Boil Eggs: Boil eggs for 9 minutes, then cool and peel. Separate yolks and whites, dice whites.

2. Prepare Filling: Mash yolks, add about 1/4 cup of mayonnaise, 3 tablespoons of milk or cream, salt, and pepper. Mix well. Gently fold in diced whites. **You can adjust the level of mayo and cream to your liking!!

It’s richer, tangier, and has a unique umami flavor thanks to its use of only egg yolks and a special blend of vinegars. It’s absolutely essential for achieving that signature creamy texture and distinct taste that sets Japanese egg salad apart from its Western counterparts. Trust me, regular mayo just won't cut it for this recipe if you're aiming for authenticity. Next up, the eggs themselves. Getting the perfect hard-boiled egg is key. For that luscious, slightly jammy, and creamy yolk, I aim for about a 9-minute boil, followed by an immediate ice bath. This stops the cooking and makes them super easy to peel. When preparing the filling, mashing those beautiful, bright yellow egg yolks until they're completely smooth is crucial. This creates the creamy base.
