Meal prep-my lunches for work
Teriyaki shrimp w Cilantro Lime rice>
Ingredients:
1. 4 cups of jasmine rice
2. 6 cups of water
3. 2 limes
4. 1 bundle of cilantro
5. A bag of fully cooked, peeled, deveined shrimp
6. Soy sauce
7. Brown sugar
8. Black pepper, salt, fajita seasoning, cayenne pepper, and garlic powder
cooking tools needed:
1. A non-stick skillet
2. A rice cooker
3. Strainer
Instructions:
RICE
1. Place 4 cups of rice in a strainer and wash the excess starch off
2. Place the 4 cups of jasmine rice in your rice cooker
3. Pour 6 cups of water in your rice cooker
4. Stir the rice and water for about 10 seconds
5. Place the top on the rice cooker and set it to cook
6. Once done fluff your rice
7. Once fluffed, cut the two limes into four slices each
8. Hand squeeze the limes into your rice and mix
9. Cut the bundle of cilantro in half and mince the half you’re using, then add to rice and mix
TERIYAKI SHRIMP
1. Place shrimp into a bowl and sprinkle Black pepper, salt, fajita seasoning, cayenne pepper, and garlic powder to your liking
2. Place shrimp in skillet only enough to cover the bottom of the pan—— DO NOT OVER CROWD THE PAN
3. Cook shrimp for 3-5 minutes on each side
4. Remove shrimp from pan
5. Using the same pan, add 1 cup of soy sauce and a half cup of brown sugar
6. Stir and let simmer on low heat then add your shrimp back in
