Ingredients:
1 (12oz) package jumbo pasta shells
1 (32oz) container ricotta cheese
1 lb. mozzarella cheese, divided
8 oz. grated parmesan cheese, divided
2 large eggs, beaten
1 tbsp. dried parsley
1 tsp. salt, or more to taste
1 tsp. ground black pepper
1 (28oz) jar pasta sauce
8 oz. sliced, fresh mushrooms (I didn’t add these this go around, but they’re very good. Add to the sauce mixture that goes on top if you decide to)
Detailed Steps:
▪️Preheat oven to 350°.
▪️Bring a large pot of slightly salted water to a boil. Add pasta and cook until tender, yet firm to the bite, 8-10 minutes. Drain
▪️While the pasta is cooking, mix ricotta cheese, 1/2 of the mozzarella cheese, 1/2 of the parm cheese, eggs, parsley, salt, and pepper in a large bowl until combined.
▪️Combine pasta sauce and mushrooms in a medium bowl. Add remaining mozzarella and parm cheeses; stir until well combined.
▪️Stuff shells with ricotta mixture and place in 9x13 Baking Dish. Pour pasta sauce mixture over the shells.
▪️Bake in pre-heated oven until edges are bubbly, and the shells are slightly set. 35-60 minutes.
