Okay, so you saw my last post about how obsessed I am with Coffee Sago, and seriously, I wasn't kidding – it's a game-changer! For all my fellow coffee enthusiasts out there, if you haven't tried making this yet, you're truly missing out. It's that perfect blend of rich coffee flavor and sweet, chewy sago goodness that just hits different. A lot of you asked, 'What exactly is sago in bubble tea?' and 'Will it taste good?' Let me tell you, yes, it tastes incredible, especially when paired with coffee! Sago pearls are similar to tapioca pearls, but often a bit smaller and sometimes have a softer bite. They're traditionally made from sago palm starch and become wonderfully translucent and chewy when cooked. When you combine them with coffee, you get this amazing textural contrast – the smooth, creamy coffee-colored liquid (just like in the picture!), the delightful chewiness of the small sago pearls, and sometimes even refreshing square coffee jelly pieces or ice cubes, which I love adding to mine. It's like an iced coffee with tapioca pearls, but elevated! Making your own 'sago de cafe' at home is surprisingly simple, and that's why I've been dying to share more about it. First, you'll want to cook your sago pearls according to package instructions until they're perfectly translucent and chewy. Rinse them well with cold water to prevent sticking. For the coffee base, you can use your favorite strong brewed coffee, espresso, or even instant coffee dissolved in hot water. Let it cool completely. Now for the magic! In a glass, combine your cooked sago pearls, chilled coffee, a touch of condensed milk or your preferred sweetener, and a splash of milk (dairy or non-dairy, whatever you fancy!). Stir it all together. To make it extra special, I often add those lovely coffee jelly cubes – they really amp up the coffee flavor and add another layer of texture. The sight of the light brown beverage with the pearls settling at the bottom, just like in that clear plastic cup from my photos, is so appealing. This isn't just a dessert; it's also a super refreshing drink, perfect for a hot day or when you need a coffee pick-me-up with a twist. It's way better than any store-bought 'boba sago' I've tried because you can customize the sweetness and coffee strength exactly to your liking. You can even experiment with it as 'sago in milk tea' by swapping out some coffee for black tea, or making a purely coffee-based version with a dash of heavy cream for extra indulgence. Trust me, once you try this homemade coffee sago dessert, you'll be hooked!



Tapioca pearls 1 pot of fresh coffee 4 pack of unflavored gelatin Your choice of ice coffee 1 can of evaporated milk 1 cans condensed milk 1 cup of your favorite syrup or creamer more to your liking . Empty the 4 pack of gelatin in water let it firm up. Then melt the gelatin for a 1min then add to a pot of coffee you can sweeten the coffee with sugar or with what ever sweetener you like. Place the mixture in a container and put in fridge till firm. Cut the coffee jello in lil square . Mix in your tapioca , evaporated milk, condensed milk ,and syrup or creamer to your liking .
