I finally put my garden harvest to good use and baked a purple sweet potato pie with the sweet potatoes I picked back in November. The flavor is just like a classic orange sweet potato pie, but with a slightly more fibrous texture that makes it unique. ☑️ INGREDIENTS:
- 2 eggs
- 1 cup sugar
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp vanilla extract
- 1 cup milk
- 2 tbsp butter
- 1.5 cups cooked mashed sweet potatoes
- 1 (9") unbaked deep dish pie crust
INSTRUCTIONS:
1️⃣ Mix together sugar, salt, spices, extract, and evaporated milk. Add eggs and beat slightly.
2️⃣ Add mashed sweet potatoes and butter and blend until smooth.
3️⃣ Pour into unbaked pie shell and bake at 450° for 10 minutes. Reduce heat to 350 and bake for 30-40 minutes or until filling is firm.
