Breakfast Cookies (No Flour, No Dairy)

These breakfast cookies are made without flour or dairy, and they've been my go-to on busy mornings. They're soft, filling, naturally sweetened, and easy to make ahead for the week. I love having a batch ready when I need something delicious on the go.

Here's how I make them 👇

INGREDIENTS:

- 2 mashed bananas

- 3 tbsp maple syrup

- 1/2 cup peanut butter (can also use almond butter)

- 1 tsp vanilla extract

- 2 cups oats

- 1/4 tsp salt

- 1/2 tsp cinnamon

- 1/4 cup chocolate chips

- 1/3 cup chopped walnuts

DIRECTIONS:

1️⃣ Preheat oven to 350°F.

2️⃣ Mix bananas, maple syrup, peanut butter, and vanilla.

3️⃣ Stir in oats, salt, cinnamon, chocolate chips, and walnuts.

4️⃣ Form balls with the dough and place them on a linked baking sheet. Flatten the dough slightly with the back of a spoon.

5️⃣ Bake for 12-15 minutes or until lightly golden.

6️⃣ Let cool and enjoy!
