Mint Chocolate Truffles 🍫🍀

These Mint Chocolate Truffles are rich, creamy, and coated in green-colored chocolate for a festive touch! Topped with a thin mint wafer, they make the perfect indulgent treat for any mint chocolate lover.

Ingredients:

For the Truffle Filling:

8 oz semi-sweet or dark chocolate, finely chopped

½ cup heavy cream

2 tbsp unsalted butter

½ tsp vanilla extract

½ tsp peppermint extract

For the Coating & Topping:

12 oz white chocolate or candy melts (melted and colored green)

½ tsp coconut oil or vegetable shortening (for smooth melting)

Thin mint wafers (such as Andes mints or Girl Scout Thin Mints), cut into small pieces

Instructions:

Step 1: Make the Truffle Filling

1️⃣ In a heatproof bowl, add the chopped chocolate.

2️⃣ In a small saucepan, heat the heavy cream and butter over medium heat until just simmering. Do not boil.

3️⃣ Pour the hot cream mixture over the chopped chocolate and let sit for 2 minutes.
