I love how simple yet satisfying this porridge is. It's packed with natural sweetness from the plantains and the sustained energy from oats, making it a truly healthy fats for breakfast option. Plus, it's incredibly versatile. My Go-To Ripe Plantain and Oats Porridge Recipe: Ingredients: 1 ripe or overripe plantain, peeled and sliced 1/2 cup rolled oats (not instant!) 1.5 cups water or plant-based milk (almond, coconut, or oat milk work wonderfully) 1/4 tsp cinnamon (or to taste) Pinch of nutmeg (optional, but I love it!) Sweetener of choice (maple syrup, honey, or brown sugar), if desired Toppings: fresh berries, nuts, seeds, a drizzle of nut butter, or more sliced plantain. Instructions: In a medium saucepan, combine the sliced plantain, oats, water/milk, cinnamon, and nutmeg. Bring the mixture to a gentle boil over medium heat, then reduce heat to low.
