I’m not a baker in my house, but my twin loves baking. She’s been waiting for a mixer for over a year! Yesterday, my parents surprised her with this! She loves it. I love these Christmas cookies. Ingredients
• ½ cup butter (or shortening)
• ½ cup granulated sugar (extra for rolling)
• ½ cup light brown sugar, packed
• ¾ cup creamy peanut butter
• 1 egg
• 2 tablespoons milk
• 1 ½ teaspoons vanilla extract
• 1 ½ cups all-purpose flour
• 1 teaspoon baking soda
• ¼ teaspoon salt
• 36 Hershey’s Kisses (unwrapped)
Instructions
1. Prep the Oven and Baking Sheet
• Preheat your oven to 350°F.
• Line two baking sheets with parchment paper or a baking mat.
2. Cream the Butter and Sugar
• In a large bowl, cream together ½ cup butter, ½ cup brown sugar, and ½ cup granulated sugar.
• Add ¾ cup peanut butter and mix until smooth.
• Blend in 1 egg, 2 tablespoons milk, and 1 ½ teaspoons vanilla extract until fully combined.
3. Add Dry Ingredients and Chill the Dough
• Gradually mix in 1 ½ cups flour, 1 teaspoon baking soda, and ¼ teaspoon salt.
• Combine until the dough forms.
• Chill the dough in the refrigerator for 10-20 minutes if it is too sticky to handle. (Chill overnight if you’d like)
4. Shape the Dough
• Roll the dough into 1-inch balls (use a small cookie scoop for ease).
• Roll each ball in granulated sugar to coat.
• Place the dough balls on the prepared baking sheet.
5. Bake the Cookies
• Bake in the preheated oven for 7-9 minutes, or until the tops no longer look doughy.
• Avoid overbaking to keep the cookies soft.
6. Add the Hershey’s Kisses
• Once the cookies come out of the oven, wait about 1 minute.
• Gently press a Hershey’s Kiss into the center of each cookie.
• If needed, return the cookies to the oven for 1 minute to ensure the chocolate stays in place.
7. Cool and Serve
• Allow the cookies to cool slightly before transferring them to a wire rack.
