Easy pasta 🍝
In one pan bring salted water to boil and cook pasta to al dente
In another pan turned heat to medium heat with olive oil
Slice your cherry tomatoes in half
Once the olive oil is warm add the tomatoes to the pan
When the tomatoes soften begin to mash them
After mashing them add in your cloves of garlic
let this cook down
After 4 to 5 minutes, add two scoops of pasta water to the pan to deglaze the bottom
Let the water start to cook out then add your seasonings
After you add your seasonings, add one more scoop of pasta water to the pan and let simmer for 2 to 3 minutes
After mine cooked, I put it in my food processor because I had fresh herbs instead of dried Italian seasoning
I would still recommend processing it
When that’s done add it back to your pan and add your noodles.
Continue to cook the noodles in the sauce, stirring continuously, agitating the starch in the noodles, which makes the pasta creamy
When the pasta seems to be to the consistency that you like, you can then add your preferred cheese. I didn’t add any cheese because my daughter’s lactose intolerant, but this would be the time to add it in and mix it together.
I topped my bowl off with Parmesan.

When making this easy pasta recipe, I found that using cherry tomatoes is a game-changer. Their natural sweetness and juiciness create a fresh, vibrant sauce without needing canned tomatoes or lengthy simmering. Mashing the tomatoes in the pan helps release their juices and form the base of the sauce quickly. Adding pasta water is a key step — the starches in the water help emulsify the sauce, turning it creamy and helping it cling perfectly to the noodles. I like to use fresh herbs in a food processor after cooking the tomato mixture instead of dried Italian seasoning. This step brightens the flavors and gives a homemade touch that dried herbs cannot match. If you have fresh basil, parsley, or oregano, this works beautifully. Cooking the noodles directly in the sauce while stirring constantly not only warms the pasta but also releases starch, enriching the sauce’s texture. I recommend continuing to stir to prevent sticking and get that luxurious creaminess without heavy cream. For those who can consume cheese, adding Parmesan or Pecorino at the end adds depth and umami. However, as mentioned, omitting cheese is completely fine — the recipe is flavorful enough on its own and great for lactose intolerance. This pasta is flexible: try different noodle types such as penne, linguine, or even gluten-free options depending on your preference. The ingredient list is straightforward — cherry tomatoes, garlic, olive oil, pasta, pasta water, and seasonings — so it’s perfect for weeknight dinners when you want something comforting but quick. Overall, this recipe exemplifies how a few quality ingredients and simple techniques can lead to a delicious pasta dish that feels special and fresh, ideal for anyone looking to elevate their homemade pasta night.
