MARRY ME CHICKEN

This was super easy and definitely a hit for my kiddos. They ate it up and left no crumbs.

All you need is chicken breast, flour, heavy cream, butter, onion, garlic, salt, pepper, garlic powder, some noodles of your choice and sun dried tomatoes.

The best thing about this is you can add however much or take away however, much you like to this dinner .

There’s not really much to it. It’s very simple and very easy.

... Read moreWhen I first tried making Marry Me Chicken Pasta, I quickly learned that having all your ingredients prepped and ready, or 'laid out,' makes the entire cooking process so much smoother. It’s like setting yourself up for success! Personally, I find that a little planning goes a long way, especially on busy weeknights, and this recipe is incredibly forgiving. Let’s talk about the star of the show: the chicken breast. I usually opt for boneless, skinless chicken breasts. For my family, about two to three medium-sized breasts are perfect. Before I do anything else, I pat them dry – this little trick helps ensure they get that beautiful golden crust when pan-fried. Then, I lightly coat them in about a quarter cup of all-purpose flour, seasoned generously with salt, freshly ground black pepper, and garlic powder. Don’t be shy with the seasoning here; it adds so much flavor right from the start! The OCR images even show a hand coating chicken in seasoned flour, which is exactly how I do it to get that perfect sear. Next up are the aromatics and the richness from the butter. A small to medium onion, finely chopped, and a couple of cloves of garlic, minced, are non-negotiable for me. I love sautéing them in about two tablespoons of unsalted butter until they’re soft and fragrant. This creates such a wonderful, savory base for the sauce. You can see these ingredients, along with the butter, beginning to brown in the skillet in some of the image steps, setting the stage for the creamy sauce. Now, for the creamy, dreamy part – the heavy cream! I typically use about one to one and a half cups, depending on how luscious I want the sauce to be. And the sun-dried tomatoes? Oh my goodness, they are an absolute game-changer! I drain about half a cup of oil-packed sun-dried tomatoes and give them a rough chop. Their intense, sweet, and tangy flavor, combined with the cream, creates that iconic 'Marry Me' taste and a gorgeous orange hue that you can spot in the finished dish images. Along with a few more spices, like a pinch of dried oregano or Italian seasoning, and sometimes a tiny bit of red pepper flakes for a subtle kick, the sauce comes alive. And finally, the pasta! While the original post mentions 'noodles of your choice,' I often gravitate towards linguine or fettuccine because they hold the creamy sauce so well. However, short pasta like penne or rotini also works wonderfully, especially for kids who might find long noodles messy. Just make sure to cook your pasta al dente, as it will finish cooking in the sauce, absorbing all those delicious flavors. Having all these components ready to go, from the raw chicken to the pasta and array of spices, makes whipping up this dish feel effortless. It truly simplifies the cooking process, making it a quick and easy dinner that leaves everyone, especially the kiddos, asking for more!
