Ingredients

2 cups cooked rice (preferably day-old, cold)

1/2 lb (225g) shrimp, peeled and deveined

2 tbsp vegetable oil

2 eggs, lightly beaten

1/2 cup frozen peas and carrots mix

1/4 cup chopped green onions

2 cloves garlic, minced

1 tbsp soy sauce (or more to taste)

1 tbsp oyster sauce (optional, for extra flavor)

1 tsp sesame oil

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

1/4 tsp red pepper flakes (optional, for spice)

Instructions

1. Prepare the rice: If using freshly cooked rice, spread it out on a tray to cool so it doesn’t clump.

2. Cook the shrimp: Heat 1 tbsp of oil in a large pan or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.

3. Scramble the eggs: In the same pan, push the shrimp aside (or remove them), add another tbsp of oil, and pour in the beaten eggs. Stir until just cooked, then break into pieces.

4. Sauté veggies and garlic: Add garlic, peas, and carrots. Stir-fry for 1-2 minutes until tender.

5. Stir-fry the rice: Add the cooked rice, breaking up any clumps. Stir-fry for 2-3 minutes.

6. Season: Add soy sauce, oyster sauce (if using), salt, black pepper, and red pepper flakes. Mix well.

7. Combine: Return the cooked shrimp to the pan and mix everything together. Stir in green onions and sesame oil.

8. Serve: Taste and adjust seasoning if needed. Serve hot and enjoy!
