Making a corn omelette (or as some call it, 'huevo con maíz'!) is incredibly straightforward. I usually start by sautéing a little bit of onion or bell pepper for a minute or two, just to get some extra flavor. Then, I add about a quarter to half a cup of corn kernels – fresh, frozen, or canned all work great! Let it cook for another minute. While that's happening, I whisk two or three eggs with a splash of milk or water, a pinch of salt, and pepper. Pour the egg mixture over the corn and veggies, and let it set around the edges. Once it’s mostly cooked through, you can fold it over or just slide it onto a plate. Voila! A fluffy, flavorful, and filling breakfast is ready to enjoy. But don't stop at just omelettes!
