Subway-Style Raspberry Cheesecake Cookies (Pudding Mix + Freeze-Dried Raspberries)
Ingredients
• 1 cup (2 sticks) unsalted butter, softened
• 3/4 cup granulated sugar
• 3/4 cup light brown sugar, packed
• 2 large eggs
• 2 tsp vanilla extract
• 1 (3.4 oz) box instant cheesecake pudding mix (dry, not prepared)
• 2 1/4 cups all-purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1 cup white chocolate chips
• 1 cup freeze-dried raspberries (lightly crushed, not powdered)
• 4 oz cream cheese, cold and cut into small cubes

Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. Cream the butter & sugars
• In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
3. Add eggs & vanilla
• Mix in eggs one at a time, then add vanilla extract.
4. Add pudding mix
• Beat in the dry cheesecake pudding mix until fully incorporated.
5. Mix dry ingredients
• In a separate bowl, whisk together flour, baking soda, and salt.
• Gradually add to the wet mixture until just combined.
6. Fold in the mix-ins
• Gently fold in white chocolate chips, cream cheese cubes, and crushed freeze-dried raspberries.
7. Scoop & bake
• Scoop 2–3 tablespoon-sized balls of dough onto baking sheets.
• Bake for 10–12 minutes, until edges are lightly golden and centers are still soft.
• Do not overbake — they’ll continue to set as they cool.
8. Cool & store
• Let cookies rest on the pan for 5 minutes before moving to a wire rack.
• Store in an airtight container with a slice of bread to keep them chewy.
