1. In a medium bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
2. In another bowl, whisk milk, egg, melted butter, and vanilla until smooth.
3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix—some lumps are okay.
4. Fold in chocolate chips if using.
5. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
6. Pour about ¼ cup of batter per pancake onto the skillet.
7. Cook for 2–3 minutes, until bubbles form on the surface. Flip and cook another 1–2 minutes until cooked through.
8. Remove and repeat with remaining batter.
