🛒 Ingredients
For the Crust
• 1 ½ cups graham cracker crumbs
• ¼ cup granulated sugar
• 6 tablespoons melted butter
• 1 teaspoon vanilla extract (optional)
For the Cheesecake Filling
• 4 (8 oz) packages cream cheese, softened
• 1 cup granulated sugar
• ¾ cup sour cream
• 1 teaspoon vanilla extract
• 1 tablespoon lemon juice
• 4 large eggs
• 2 tablespoons all-purpose flour (helps prevent cracks)
Optional Toppings
• Fresh strawberries or blueberries
• Strawberry sauce
• Whipped cream

👩🍳 Instructions
1. Preheat Oven
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
2. Make the Crust
In a bowl, mix graham cracker crumbs, sugar, melted butter, and vanilla until combined.
Press the mixture firmly into the bottom of the pan.
Bake 8–10 minutes, then let cool.
3. Make the Filling
In a large bowl, beat the softened cream cheese until smooth and creamy.
Add sugar and mix until combined.
Mix in:
• Sour cream
• Vanilla extract
• Lemon juice
Add eggs one at a time, mixing on low speed just until incorporated.
Fold in the flour.
4. Assemble
Pour the cheesecake filling over the cooled crust and smooth the top.
5. Bake
Bake for 55–65 minutes, until the center is slightly jiggly but the edges are set.
Turn off the oven and crack the door open.
Let the cheesecake sit in the oven 1 hour (prevents cracking).
6. Chill
Refrigerate for at least 4 hours, preferably overnight.
7. Serve
Slice and top with berries, sauce, or whipped cream.

Simmer together for 5–7 minutes:
• 1 cup strawberries
• ¼ cup sugar
