Homemade Seafood Gumbo

Ingredients:

3/4 cup vegetable oil

1 cup all-purpose flour

1 1/2 cups finely chopped onions

3/4 cup finely chopped green bell peppers

3/4 cup finely chopped celery

2 tablespoons minced garlic

One 12-ounce bottle of amber beer

6 cups shrimp stock

1/4 teaspoon dried thyme

2 bay leaves

1/2 pound gumbo crabs (about 2)

2 teaspoons Worcestershire sauce

1 1/2 teaspoons salt

1/2 teaspoon cayenne pepper

1 pound medium shrimp, peeled and deveined

1 pound white fish fillets, such as catfish, grouper, snapper, or sole

1 tablespoon Emeril’s Original Essence

2 cups shucked oysters with their liquor

1/4 cup chopped fresh parsley

1/2 cup chopped green onion tops

White rice, for serving

Directions:

Place an 8-quart stockpot over medium heat and add the oil. Allow the oil to heat for about 5 minutes, then add the flour. Stir the oil and flour together with a wooden spoon to form a roux. Lower the heat to medium-low and continue to stir for 15 to 20 minutes, or until the roux is the color of milk chocolate.

Add the onions, bell peppers, and celery to the roux and stir to blend. Cook the vegetables for 5 minutes, then add the garlic and cook for 30 seconds. Add the beer and shrimp stock to the pot. Season with thyme, bay leaves, gumbo crabs, Worcestershire sauce, salt, and cayenne. Bring to a boil, then lower the heat and simmer for 1 hour, skimming any foam and oil from the surface.

Season the shrimp and fish with Emeril’s Essence. Stir the shrimp and fish into the gumbo and cook for 2 minutes. Add the oysters and cook, stirring often, for an additional 5 minutes. Taste and adjust seasoning if needed.

Garnish with parsley and green onions and serve in shallow bowls over white rice.

... Read moreSeafood gumbo is a classic dish that embodies the rich culinary traditions of Louisiana Creole cuisine. The key to a flavorful gumbo lies in its roux, which this recipe develops to a milk chocolate brown, adding a deep, nutty flavor that forms the base of the dish. Using amber beer in combination with shrimp stock lends a unique depth and subtle sweetness, balancing the spices such as cayenne pepper, dried thyme, and Worcestershire sauce. Including a variety of seafood like shrimp, crab, white fish fillets (catfish, grouper, snapper, or sole), and shucked oysters with their liquor creates a complex, satisfying texture and taste profile. To enhance gumbo authenticity, the choice of gumbo crabs adds distinct seafood richness, and the traditional trinity of finely chopped onions, celery, and green bell peppers provides an aromatic foundation. Cooking the roux slowly over medium-low heat while stirring continuously is crucial to avoid burning and achieve the desired color and flavor. Serving this gumbo hot over a bed of fluffy white rice contrasts the hearty stew and helps soak up the delicious broth. When making this dish, fresh seafood quality directly influences the final flavor, so sourcing from trusted fishmongers or markets ensures the best results. Additionally, seasoning with Emeril’s Original Essence—a blend of herbs and spices—adds a homemade touch cherished in Cajun cooking. Garnishing with freshly chopped parsley and green onion tops provides a vibrant finish and enhances the aroma. For those interested in exploring variations, gumbo recipes can be modified by experimenting with different seafood combinations or adding smoked sausage for more depth.
