Cheesy Mexican Beef & Dorito Casserole
Ingredients:
1 lb ground beef
1 packet taco seasoning
1/2 cup water
1 (10 oz) can Rotel (diced tomatoes & green chilies), drained
1 (15 oz) can corn, drained
1 (10.5 oz) can cream of chicken soup
1/2 cup sour cream
2 cups shredded Mexican cheese blend
1 (9.75 oz) bag Nacho Cheese Doritos, crushed
1/4 cup chopped green onions (optional)
Directions:
Preheat oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat. Drain excess grease.
Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
Add Rotel, corn, cream of chicken soup, sour cream, and 1 cup of shredded cheese. Stir to combine.
In a 9x13-inch baking dish, spread half of the crushed Doritos on the bottom.
