How to Make Cotton Candy Without a Machine
Ingredients:
- 2 cups granulated sugar
- 1/2 cup corn syrup
- 1/2 cup water
- 1/2 tsp flavored extract (vanilla, strawberry, raspberry, etc.)
- 1-2 drops gel food coloring (optional)
- Candy thermometer
- Baking sheet lined with parchment paper
- Whisk with ends cut off, fork, or 2 long skewers
- Optional: paper cones or lollipop sticks for serving
Directions:
1. Prep Your Tools & Surface: Line a countertop or large tray with parchment paper. Lightly oil your whisk (with the loops cut off) or skewers and forks to prevent sticking. Place your paper cones or lollipop sticks nearby, ready to catch the cotton candy.
2. Cook the Sugar Mixture: In a medium saucepan, combine the granulated sugar, corn syrup, water, and any food coloring and flavored extract you are using. Stir the mixture over medium heat until all the sugar is dissolved. Once dissolved, stop stirring and allow the mixture to heat without disturbance until it reaches 320°F on a candy thermometer, which is known as the hard crack stage.
3. Spin the Sugar by Hand: After reaching the desired temperature, carefully dip the end of your whisk or fork into the hot sugar syrup. Move it above the lined parchment paper, flicking back and forth in quick motions. As you do this, long strands of sugar will fall and create a web-like appearance. Continue this process to build up layers of cotton candy.
4. Shape the Cotton Candy: Once you have gathered enough sugar webs, gently shape them around your prepared paper cone or stick. Be careful not to compress the sugar too much as you want to maintain its airy structure.
5. Serve Immediately: Cotton candy is best enjoyed fresh. Serve it right away, or if you need to store it, place it in an airtight container. Be aware that humidity can cause the cotton candy to melt, so it’s recommended to consume it within 1–2 days.
Tips & Variations:
- If the cotton candy seems too dense, try adjusting the speed and motion of your hand when spinning the sugar. The faster you flick, the lighter and fluffier the strands will be.
