Easy Boston Cream Pie Cupcakes

Ingredients

For the cupcakes:

1 1/2 cups all-purpose flour

1 cup granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup milk

2 large eggs

1 teaspoon vanilla extract

For the cream filling:

1 cup milk

1/4 cup granulated sugar

2 tablespoons cornstarch

2 large egg yolks

1 teaspoon vanilla extract

For the chocolate glaze:

1/2 cup heavy cream

1 cup semi-sweet chocolate chips

Preparation

* Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.

* In a large bowl, whisk together flour, sugar, baking powder, and salt.

* In a separate bowl, whisk together softened butter, milk, eggs, and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

* Fill each cupcake liner about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.

* While the cupcakes cool, prepare the cream filling. Whisk together milk, sugar, cornstarch, and egg yolks in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in vanilla extract. Let it cool completely.

* Once the cupcakes are cool, use a small knife or a cupcake corer to scoop out the center of each cupcake, leaving a hollow space. Fill each hollow with the cooled cream filling.

* To make the chocolate glaze, heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and stir in the chocolate chips until they are fully melted and smooth.

* Dip the top of each filled cupcake into the chocolate glaze, allowing the excess to drip off. Drizzle any remaining glaze over the top for decoration.

* You can pipe a small amount of whipped cream on top before serving for a decorative finish.
